Mushroom Rice with Indian Spices


For Mushroom Rice you need the below ingredients:
Cooked Rice-3 cups
Mushroom-1 cup
Bay leaf-1
Cloves-2
Cardamom-1
Cinnamon-2
Cumin seeds-1/2 tsp.
Chopped Onion-1
Ginger and garlic paste-1 tsp.
Turmeric powder-1/4 tsp.
Tomato-1 medium size(chopped)
Chili powder-1 tsp.
Coriander powder-1/2 tsp.
Cumin powder-1/4 tsp.
Pepper powder-1/2 tsp.
Lime juice-1 tsp.
Oil-10 ml.
Salt.

Method:
1.In a pan add oil, wait till it is hot add spices(Bay leaf, Cardamom, cinnamon, cloves).
2.Add cumin seeds, onions and ginger garlic paste fry till the raw smell goes.
3.Add Turmeric powder, tomatoes, chili powder, coriander powder, cumin powder, pepper powder and salt. Mix well and cook till it leaves out oil around.
4.Add mushroom and cook till the mushrooms are soft and tender.
5.Finally, add lime juice and switch off the flame.
6.Now, add the mushroom mixture to the cooked rice and mix well. Add salt if desired.
7.Serve with hot sauce or tomato ketchup.

Potato Curry


To make Potato Curry you need the below ingredients:
Cooked Potatoes-2 medium size
Yogurt/Curd-2 tsp.
Bay leaf-1
Gram flour/All purpose flour-1 tsp.
Cumin seeds-1/4 tsp.
Coriander powder-1/2 tsp.
Pinch of turmeric powder
Chili powder-1 tsp.
Ginger paste-1/2 tsp.
Green Chili-1
Coriander Leaves few
Oil-2 tsp.

Method:
1.First make a paste of yogurt, chili powder, turmeric powder, coriander powder, ginger paste and chopped green chilies and mix it well.
2.In a pan heat the oil, add bay leaf, cumin seeds, after it crackles add gram flour and roast till you get a nice aroma. Now, add the yogurt paste and keep stirring. Cook till it leaves out oil(for about one minute).
3.Add little water, the cooked potatoes cut into cubes, coriander leaves and salt to taste. Cook for two more minutes.
5.Ready to serve.

Note: If you want more gravy consistency add more water.

French Fries


To prepare French Fries you need the below ingredients:
Potatoes-1 big size
Oil to fry
Salt
Chili Powder.

Method:
1.Cut the potatoes in a rectangular shape and put them in water so that the color does not change.
2.Heat the oil in a frying pan.
3.Spread the potatoes on paper towel and remove moisture from it.
4.Now, drop the potatoes in boiling oil and fry till done.
5.Sprinkle salt and chili powder according to your taste.
6.Enjoy with any sauce.

Lemon Rice



To prepare Lemon Rice you need the below ingredients:
Cooked rice-2 Cups
Mustard seeds-1/4 tsp.
Ground nuts/Peanuts-1 tsp.
Kadalebele/Red gram-1/2 tsp.
Uddinabele /Split black gram-1/2 tsp.
Curry leaves-few
Onion finely chopped-1 medium size.
Green chili-3 number
Turmeric Powder-pinch
Coriander leaves chopped-1 tsp.
Lemon juice-4 tsp.
Oil-10 ml
Salt

Method:
1.Heat the oil in a pan, add mustard seeds when it crackles add ground nuts and fry till slightly brown. Add Kadalebele/red gram, uddinabele/split black gram and stir till slightly brown.
2.Add onion, green chili, curry leaves and turmeric powder. Stir, till the onions are cooked.
3.finally add coriander leaves and switch off the flame.
4.Now, add the above mixture to the cooked rice along with lemon juice and salt, mix well.
5.Finally, serve with pickle.

Pani Puri



To Prepare Pani Puri you need the below ingredients:
For Pani:
Coriander Leaves- 1 bunch
Mint Leaves-1/2 bunch
Curry Leaves-2 number(optional)
Chili Green-2
Pepper powder-1/2 tsp.
Ginger-1/2 inch.
Cumin Powder-1/2 tsp.
Tamarind Juice-1 Cup
Sugar-1/2 tsp.
Black salt pinch
Salt
Water-1 liter.

Method:
1.Make a paste of coriander leaves, mint leaves, curry leaves, green chilies and ginger.
2.Strain the mixture and collect the coriander juice in a bowl.
3.Add tamarind juice, pepper powder, cumin powder, black salt, sugar, salt and coriander juice to one liter of water.
4.Now pani is ready.

For Puri:
Semolina/Rava-1 cup
All purpose flour/Maida-4 tsp.
Oil.

Method:
1.Make a hard dough of semolina/rava and all purpose flour. Knead well and set aside for 15 minutes.
2.Spread the dough with roller and cut into 2 inch diameter circles with cookie cutter.
3.Deep fry in oil till done.
4. Now, the puri are ready.
5.Fill the puri's with cooked peas, cooked potatoes and dal moth(mixture).
6.Dip the filled puri's in pani and enjoy.

Godhi Dosa/ Wheat Flour Crepe



To prepare Godhi Dosa/ Wheat Flour Crepe you need the below ingredients:
Wheat Flour-2 cups
Rice Flour-1 cup
Pinch of Salt
Oil
Water.

Method:
1.To make the batter add wheat flour, rice flour, salt and water. Stir till you get a batter constancy.
2.Now, pour the batter on pan and spread it with the back of spoon. Sprinkle oil and close the lid.
3.Cook the dosa on both side.
4.Finally ready to eat.

Note: The batter consistency should be as thick as coconut milk.

Spinach/Palak Curry



To prepare Spinach/Palak Curry you need the below ingredients:
Spinach/Palak-1 bunch(or 1 cup).
Small White bean-4 tsp.
Garlic-2 cloves.
Chili powder-1/2 tsp.
Oil-2 tsp.
Salt.

Method:
1.Soak the White bean over night (Or you can use ready cooked white bean).
2.Clean the spinach in water, chop them and keep aside.
3.In pan add oil, mashed garlic, white bean and stir for few minutes.
4.Add water and wait till the white bean is three-fourth cooked.
5.Add spinach, chili powder and salt.
6.Cook for 3-4 minutes. Now, ready to serve.

Bhajji


For Bhaji you need the below ingredients:
Medium or Big size Chili-6
Gram Flour-6 tsp.
Rice flour-2tsp.
Chili powder-1/2 tsp.
water.
Salt.
oil to fry.

Method:
1.Make a batter of gram flour by adding rice flour, chili powder, salt and water.
2.Heat the oil in pan in a medium flame.
3.Dip the chilies in batter and deep fry in oil.
4.Serve hot with sauce.

Note:With the same batter we can do onion bhaji and potato bhaji.

Omelette

For Omelette you need the below ingredients:
Egg-2
onion finely chopped-4 tsp.
Green Chili-1 finely chopped
Salt.
Oil-1 tsp.

Method:
1.In pan fry the onions and green chili by adding salt, till the onions become transparent.
2.Beat the eggs in a bowl, add the fried onions+chili and mix it well.
3.To the same pan pour the mixture and cook on both side.
4.Finally, omelette is ready.

Egg Curry


For Egg Curry you need the below ingredients:
Egg-1
Tomato-2 medium size
Pepper-1/4 tsp.
Garlic-3 cloves
Chili Powder-1 tsp. (or samber powder)
Oil-1 tsp.
Salt.

Method:
1.Make a paste of garlic and pepper.
2.Cook the whole tomatoes in a pan by adding little water and cover it with a lid.
3.After 5 minutes, switch off the flame and allow the tomatoes to cool.
4.Peal of the skin of tomatoes and smash them into puri.
5.Next, put oil in a pan add garlic+pepper paste fry till the raw smell goes. Add tomato puri, chili powder and salt.
6.When it comes to boil add egg and stir only once. Allow it to cook for 3-4 minutes.
7.Now the egg curry is ready to serve. Goes well with chapati's, rice and puri's.

Note: The water consistency should be less in the tomato puri, before adding egg.

Carrot Halwa


For Carrot Halwa you need the below ingredients:
Grated Carrots-3 cups
Fat Free Milk-1&1/2 cups
Sugar-1 cup
Cardamom-2
Oil/Ghee-2 tsp.
Nuts (Almond and Dry grapes)-1/2 cups

Method:
1.In a non-stick pan fry the grated carrots in oil/ghee for for 5 minutes in a low flame. When the carrots changes the color add milk and stir it constantly.

2.By this time the carrots absorbs all milk and become soft. Now, add sugar and keep stirring till you get halwa consistency.

3.Now, add cardamom powder and fried nuts (fry the nuts and grapes in oil) to it and mix well.

4.Finally, Carrot Halwa is ready to eat.

Note:I have used less oil and fat free milk, which is good for health and tastes excellent. Reduce sugar if the carrots are sweet.

Vegetable Palav


For Vegetable Palav you need the below ingredients:
Rice-1 cup
Mixed vegetables-1 cup (Beans, carrots, cauliflower, etc.)
Peas-1/4 cup
Spices-Bay leaves(2), Cloves(2), Cinnamon(2) and Cardamom(2)
Cumin Seeds-1/4 tsp.
Onion-1 medium size finely chopped.
Green Chili-3 finely chopped.
Ginger garlic paste-1tsp.
Pepper powder-1/2 tsp.
Lemon juice-2 tsp.
Oil-10 tsp.
Water-2 cups
Salt.

Method:

1.In cooker pan put oil, when the oil gets heated add all spices and cumin seeds wait till it crackles. Add onions and chilies, fry till the onions become transparent. Now, add ginger garlic paste and pepper powder fry till the raw smell goes. Add vegetables and peas and fry for 5 minutes by adding little salt.

2.Next, add rice to the vegetable mixture and fry for few seconds. Add water, lemon juice and salt to taste stir.

3.Cover the pan and wait for two whistle and switch off the flame.

4.Finally serve the vegetable palav with raitha.

White Rice and Samber



To prepare White Rice you need the below ingredients:
Rice-1 cup
Water-2 cups

Method:
1. Take a vessel add rice and water. Place it on high flame and cook till three-fourth done.
2. Now lower the flame and allow it to cook for few more minutes. when the rice is completely cooked switch off the flame. Hence white rice is ready.

To prepare Samber you need the below Ingredients:
Toor dal-1/2 cup (Best to soak in water before use)
Vegetables-1 or 2 cups(Beans, Carrots, Potatoes, Drumstick, etc.)
Tomatoes-1 medium size.
Curry Leaves-1 long spring
Coriander leaves-1/4th bunch
Turmeric Powder-1/4 tsp.
Grated Coconut-1/2 cup
Onion-1 medium size
Samber Powder-2 tsp.
Tamarind juice-2 tsp.
Mustard Seeds-1/4 tsp.
Oil-2 tsp.
Salt to Taste.

Method:
1. In cooker add toor dal, vegetables cut into small pieces, chopped tomatoes, chopped onion, few curry leaves, chopped coriander leaves, pinch turmeric powder and water. cook for 2 whistle and keep aside.

2. Make a paste of coconut, few onion slice, few tomatoes slice and samber powder.

3. Take a vessel add oil, mustard seeds, curry leaves. After few seconds add cooked toor dal+vegetables, coconut paste and tamrind juice. Finally, add salt and cook till it comes to boil for 5 mins. Serve the samber with hot rice.

Akki Roti


To prepare Akki Roti you need the below ingredients:
Rice flour-3 cups
Water-2 cups
A pinch of salt.

Method:
1.Take a pan add 2 cups of water, 2 spoons of rice flour and pinch of salt mix it well and switch on the flame.

2.Wait till the water comes to boil (as in the first picture) and lower the flame. Add rice flour little by little and at the same time mix it well till you get a soft consistency (as in second picture). Now close the lid and switch off the heat. Wait till it cools.

3.Now add few more rice flour to make a smooth dough just like chapati dough (as in picture 3).

4.Divide dough into 6 equal parts and spread with roller (as in picture 4). Put them on roti pan and cook on both sides partially (as in picture 5).

5.Now do the roti on direct low flame on both sides (as in picture 6). Finally serve hot akki roti with any side sabji.
